Pin to Pan: Gluten-Free No Bake Nutella Cheescakes

So I spotted this amazing recipe for No Bake Nutella Cheesecake by My Baking Addiction over on Pinterest (via Katie) a couple weeks ago, and just new I needed to create a gluten-free version for my daughter's birthday. Since the recipe is virtually gluten-free as is, it was easy to adapt and tastes every bit as good as the original (I'm certain of it). If you'd like the original version you can find it right here. Gluten-Free Mini No Bake Nutella Cheesecakes (adapted from My Baking Addiction):

INGREDIENTS:

For the crust:
• 12 Gluten-free Chocolate Sandwich Cookies such as KinniToos Chocolate Vanilla Sandwich Cookies, crushed into crumbs
• 3 tablespoons unsalted butter, melted
For the Filling:
• 1 (8 ounce) package cream cheese, softened
• 2/3 cup Nutella
• 1 teaspoon pure vanilla extract (make sure that it is gluten-free)
• 1 (8 ounce) tub frozen whipped topping, such as Kraft Cool Whip (gf), thawed
For the Garnish (optional):
• Whipped topping, optional
• Crushed gluten-free chocolate sandwich cookies (such as KinniToos Chocolate Vanilla Sandwich Cookies).
DIRECTIONS:
Visit My Baking Addiction for the recipe directions. Follow along exactly, substituting gluten free ingredients listed here in place of those listed in her recipe. Top with a dollop of whipped cream and a sprinkle of crushed cookie crumbs to finish.
Try not to eat the whole thing in one bite...but I won't judge you if you do. xo Ez

You will love it Jade! It's so easy to make and probably a little too easy to eat! The hardest part is waiting for it to set in the fridge for two hours before gobbling it up. xo Ez
